Forget the fancy, open steak sandwich. This is how it's supposed to be. Simple ingredients and the entire thing WORKS like a sandwich. No knife and fork needed! The key with this match is the stout really works with the steak, onions and in particular the aged cheddar!

Olive oil

1 small onion, sliced

4 slices of your favourite bread

2 x 150g sirloin steaks (thin cut)

2 thick slices aged cheddar

Iceberg Lettuce

Tomato

Seeded mustard

Fry the onions until they have good colour and keep warm. Lightly brush one side of each slice of bread with olive oil. Heat a griddle pain to high heat. Toast the bread in the pan and set aside, keep warm. In the same griddle pain, quickly fry the steaks, about a minute each side or to your liking. Set aside to rest and keep warm. Spread the bread with some mustard and layer on the lettuce, tomato, steak cheese and onion. Season with sea salt and cracked pepper. Eat!
